Creme butter and sugars in mixing bowl, well, until fluffy.  Beat eggs and vanilla together, then add to bowl with butter and sugars and mix until incorporated.  Meanwhile, whisk dry ingredients together very well, then slowly incorporate into mixing bowl.  Mix only until just blended and no flour pockets remain. Go easy, over stirring will make the cookies tough.

Mix in all remaining ingredients into dough by hand, being patient. When the dough becomes unbelievably, ridiculously stiff (after you swear it's all wrong?) it's right!

 

Form stiff dough into uniform balls (I use a melon scoop) and bake at 350 (or 335 convect) until centers are set but tops are still soft and puffy, 8 - 9 minutes, turning pan once to ensure even baking. Remove and let cookies finish cooking on the hot pan until done, at least 5 minutes or until cool. Perfect texture and golden bottoms guaranteed. Makes 2.5 dozen cookies and about as many friends.
